Germany has its Black Forest ham and we now have Black Combe ham. Named after the mountain just a couple of miles South of here this too is a heavily smoked dry cured ham. Produced from prime pork topsides and then air dried we are very pleased with the result.
Originally developed for the high quality catering market the Country Cure range is intended to provide an alternative to the mass produced brine injected products on offer to the public.
