Not content with producing one prosciutto style ham we have taken this recipe - first documented in 1843 - and carefully adapted it over the years to produce another. A rich pickle of old ale, molasses and brown sugar, followed by a light smoke over oak ensures a flavour and product which is unique. It is supplied, and used, in the same manner as Air Dried ham but has a richer, fuller flavour.
